Nutrition is important to understand because it is a significant contributor to the health and wellness of a human being. Nutrition can determine the weight of a person, the performance of organs and the body’s ability to prevent or accelerate certain diseases. Health and nutrition can be influenced by several factors such as family, friends, peers as well as physical and mental stress. As a young child, the immediate family is the biggest influence on nutrition because they are the first role models and establish the initial habits that the individual will develop. Polyunsaturated fats are found in fish and vegetable oils and are an essential nutrient which reduces the risk for coronary heart disease (Shulman, 2010, pg. 51). The unhealthy fats are the trans fatty acids, saturated and unsaturated, such as butter, cheese and animal fat, should be completely removed from diets. Saturated trans fats contribute to an increased low density lipoprotein (LDL) cholesterol levels, high blood pressure, increase inflammation and heart disease. Unsaturated trans fats also contribute to higher LDL cholesterol and lower the high-density lipoprotein (HDL) cholesterol levels (Shulman, 2010, pg. 52). A fast paced society has lead to and increased consumption of prepackaged food is because it is a convenient option when people are in a time restraint and for people who are stressed (C.L. A way to overcome this is to spend some time planning meals for a week and by arranging healthy snacks, such as preparing raw vegetables ahead of time, to make it easier to eat healthy when in a time restraint. To determine the level of my fiber intake from a 3 day sample of my diet, I performed a Prospective Diet Analysis. On average, I consumed 22.3 grams of fiber, just missing the recommendation of 25 grams. Coherent to the findings of the related studies, my cholesterol intake decreased and by the third day totaled 124.5 mg, which relates to 42% of the Daily Recommended Intake of 300 mg.

Throughout my life I made poor choices pertaining to my nutrition in part by cultural experiences and my personal lack of awareness. One of my biggest challenges growing up was digestive related in which, I have struggled with constipation most of my life. As I did my research in food science, I realized that much of what I ate had a direct effect on my digestive problems. Once I changed my diet, over the course of time, my digestive issues ceased. As a result of my personal experience, I gained wisdom regarding the importance of good nutrition.
