These flowering stems are frequently robust extensions of existing leaf-bearing stems, and in order to create them, a plant diverts resources away from generating edible portions like leaves or roots, resulting in flavor and texture alterations, withering, and a poor quality harvest in general. Bolting is the term used to describe plants that have generated blooming stems in this way. Lettuce, basil, beets, brassicas, spinach, celery, onion, and leek are some of the crops that are prone to bolting.
