I'm one of the nutrition assistants for Lehman's Biggest Weight Loss Challenge, which is hosted by Professor Robert Harris in the Fitness Center of the Apex Building located on Lehman College campus. It's a nine-week challenge where students can receive helpful eating tips, developed exercising plans and learn ways to start leading healthier lifestyles.
As the nutrition assistant, my overall job to provided individualized nutrition assessment. This could include, but not limited to, helping participants choose healthy food substitution, educate on portion control, eliminating empty calories, helpful eating tips, creating a well-balanced diet plan, counting calories and balancing calories, understanding food labels, and so much more.
I started Feb. 14th recruiting students by explaining the challenge and its purpose. Also, I designed two nutrition flyers

I spoke with many of them and they all were interested more in learning ways how to lead healthier lifestyles rather than losing the weight. Losing the weight just seemed like a bonus. Students could sign up as a team of two or as an individual to then be paired with someone randomly. Also, it was a mandatory each student come back on Feb. 27th for the first weigh in. If not, they couldn't participate.
Feb. 27th was hectic. At least 90% of the students who had signed up came back for the first weigh in of the program. Along with more recruiting, I took the heights and weights of the participants and recorded it. These recordings would be used to calculate each person's BMI.
I spoke with a couple students-many of them wanted to know if rice was bad and how much calories they should be burning if they wanted to lose weight. I also spoke with one lovely girl who wanted to know about healthy food choices at fast-food restaurants and in Lehman's cafeteria. I met a funny mom of three boys who wanted advice on healthy quick family

In our last survey they all seemed to understand what eating healthy consists of, therefore, we propose that the off campus pass can make it a reality following these 3 steps:
Writing down what you eat for three days shows you more about your diet then most would think. The paper, and 3 day diet diary we did was to help show us what we need to consume more of, less of, what we need to cut out of are diet, and lastly what we need to add to be a healthy individual. Wiley Plus was used to really show the breakdown of what we eat. I simply put what I wrote on paper into the Wiley food journal, wich furthermore puts everything into the catagories, and sections for you, wich was very helpful. I overall hoped my results would be decent, or average. The results I recieved were simply what I expected.

For face-to-face meetings, participants weigh themselves in front of their group members as a sort of bonding process. The weights are recorded and advice is given according to the amount of weight loss or, if applicable, weight gain, for the week. For online weigh-ins, participants enter their weights into the computer each week.

Obesity in America is a very prevalent issue that is affecting all generations. According to the 2015 American Obesity study, more than two-thirds of adults are obese. This is due partially to oversized portions and processed food, however, one of the biggest reasons is the lack of good eating habits while growing up. In college, students go for the more convenient food options that are generally extremely unhealthy and processed. The lack of healthy food options for students hinders the ability to create good eating habits for later in life. Grand Canyon University should establish healthier food options in campus because it will help students eat less processed foods which are causing sickness and unhealthy lifestyles.
I listen to patients and I address the issues that are most important to them. As the clinical director for the OAS community clinics at Ross University, I worked diligently with our faculty advisors to provide free clinical evaluations to the local Dominican community. We offered screening examinations for hypertension, diabetes and obesity. It was my responsibility to train the volunteers, set up the clinic, and to ensure that the clinic ran smoothly for both students and patients. The gratification that I got from promoting healthy living and disease prevention when participating in community clinics played a huge factor in motivating me to start a weekly weight management clinic with my mentor. The registered dietician at the WICC department provided lots of education for the clients that I observed. She provided proper nutrition education for their age recommendation based on the MyPlate and food pyramid. She spoke at length with each client about meeting requirements and ways to include certain foods in their diets. She educated the parents on proper weight/height guideline. She provided each parents or client with educational material regarding nutrition guidelines based on age. The pamphlets were based on age starting at 1 year and went through 5 years of age. She also educated the parents of infants on proper nutrition regarding bottle, sippy cup and pacifier use. The appointments were used to give vouchers for purchase
In the past few weeks, I have attempted to exercise at least 5 times a week, challenge myself by eating more fruits and veggies, drinking more water, eating more superfoods, and getting at least 8 hours of sleep at night. I also worked on overall improving my own wellness with more meditation, winding down at night before sleeping, and dumping the processed, unhealthy foods. At the beginning, I thought this would be simple, but as days passed, I soon realized how unhealthy my usual lifestyle is and how much better I was feeling focusing more on my health. From running a mile around the neighborhood to sleeping more at night, I saw an improvement physically and mentally.

We are required to obtain certain amount of nutrients from food. Food can simply divide into 2 groups, macro-nutrients and micro-nutrients composition. Both of the groups mentioned do affect the metabolism rate. According to Hulbert and Else, dietary fatty acid will affect the metabolism rate and some of the polyunsaturated fatty acid will increase the metabolism rate (1999). Meanwhile, different kinds of animals have their own unique requirement for macro-nutrients, such as proteins, carbohydrates and fat. Moreover, most of the food intake is driven by achieving the required protein intake. They knew exactly what the BMI for every child should be and be able to determine if they are overweight or obese for their age and height. The BMI rate of everyone was taken at the beginning of every school year. The coordinators told all the children about the walking program since the beginning of the school year (Zuraikat 2010). Children weren’t forced to participate but they were encouraged to do so in order to change their lifestyles (Zuraikat 2010). What participating children had to do in order to be part of the walking program was walk outside a certain distance and when it rained they had to walk inside in the gym in order to continue to be part of it, the goal for everyone was to reach five to ten miles each semester (Zuraikat 2010). The walking program was great because teachers were responsible to supervise all the participating children and they gave them a card for every lap they finished (Zuraikat 2010). Everyone that met the goal received a gift card and that became the motivation to children because then they could get free objects from different places (Zuraikat 2010).
Ever since I can remember, I have always wanted to do something special in life. I was born in a small village in Mexico where public health and education were very limited. In 1996, my family and I got the opportunity to move to the United States. This move brought me closer than I had ever thought possible to accomplishing my dream of becoming a registered dietitian and working in public health nutrition. I have always valued my education because where I am from it was really difficult to study beyond middle school. Here, in the United States, I have gotten the chance to further my education beyond high school.
