Assess how influences on the dietary intake may affect the nutritional health of individuals (M2) The influences of underlying health conditions can result in the need for specific nutrients as well as influencing what people are or aren’t able to eat. This means it can be more complicated to get all the essential nutrients and a balanced diet, especially when you have to avoid certain foods. One health condition that affects people is Coeliac Disease; this is intolerance to the protein ‘gluten’ which is found in wheat, barley and rye. When coming into contact with gluten the body produces antibodies which then attack the lining of the bowel. They therefore may feel the need to follow a vegetarian diet which means they do not eat meat, poultry or fish (unless pescetarian who do eat fish) but do still eat dairy products and farm produce e.g. eggs. Some people may further choose to restrict their diet even further and become vegans whom exclude all meat, poultry, fish, dairy products and farm produce from their diet. Eliminating all animal products from the diet increases the risk of certain nutritional deficiencies. Micronutrients of special concern for the vegan include vitamins B-12 and D, calcium, fatty acids such as omega 3 which can be obtained from oily fish. Unless vegans regularly consume foods that are fortified with these nutrients, appropriate dietary/vitamin supplements need to be consumed. Iron deficiency which can cause anaemia will also be a concern as they do not consume any red meat to be able to get the iron their body requires. It is therefore important that when following a personal choice diet such as veganism that they get a nutritionally balanced diet from other foods that they are allowed to eat.
