Concept introduction:

Mutarotation is the phenomenon by which the two forms of glucopyranose: α- glucopyranose and β- glucopyranose remain in equilibrium when dissolved in water. The α- glucopyranose gets converted into β- glucopyranose with time by acid-base catalyzed mutarotation of glucopyranose and vice a versa.
